Want to eat healthy and fast, make it simple: Sauteed Kale and Grilled Wild Salmon. 20 min including prep time.

Wash and chop the kale. Add to a deep braising pan with some oil (sesame or olive oil) herbs and garlic to your liking. Add the kale while the pan is warming up. When it is starting to heat up, instead of adding more oil just add a little water or vinegar if you prefer that. Sometimes I use mirin because it gives it a little sweetness, or left over green tea:)

Stir for a few minutes at high heat. Then turn off the heat and put the lid on – and let it sit for 5 min to cook a bit more. You can of course cook it for longer if you prefer.

For the fish. Pre-heat the oven at 425 degrees. Add the wild salmon, or any other fish you prefer, to a baking dish (I love using a clay one) and put it in the oven for 12-15 min, depending on how you like it cooked. I prefer it lightly cooked. You can add herbs to your liking or as I did here, some Herb des Provence and pesto paste mixed with a little water to lighten it up.
